Instructions
- In a shallow bowl, whisk together the eggs, milk, salt, pepper, and herbs (if using).
- Place the crumpets in the egg mixture, pressing slightly to help them soak up the liquid. Let sit for a few minutes, flipping once.
- Heat the butter in a non-stick skillet over medium heat.
- Add the soaked crumpets and cook for 2–3 minutes per side, or until golden brown and the egg is cooked through.

Notes
- Crumpets should be slightly stale for best absorption, but fresh ones work too.
