Instructions
- In a food processor, pulse circus animal cookies into fine crumbs.
- In a bowl, mix cookie crumbs with softened cream cheese until a dough-like consistency forms.
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Freeze for 20–30 minutes until firm.
- Melt white chocolate chips or candy melts in the microwave in 30-second intervals, stirring until smooth.
- Dip each ball into melted chocolate and place back on parchment paper.
- While coating is still wet, top with sprinkles or sanding sugar if desired.
- Let chocolate set at room temperature or in the fridge for 10–15 minutes before serving.
