Description

These Cinnamon Roll French Toast Roll-Ups combine the best of cinnamon rolls and French toast. Filled with a buttery cinnamon-sugar mixture, then fried until golden brown and coated with cinnamon sugar, they’re perfect for breakfast or brunch!

For the Roll-Ups:

  • 8 slices white bread, crusts removed
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon

For the Egg Mixture:

  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Coating:

  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Optional Toppings:

Instructions

  • Prepare the Bread:

    • Use a rolling pin to flatten each slice of bread. Set aside.
  • Make the Cinnamon Filling:

    • In a small bowl, combine the softened butter, brown sugar, and cinnamon until well mixed.
    • Spread a thin layer of the cinnamon filling over each flattened bread slice, then roll them up tightly.
  • Prepare the Egg Mixture:

    • In another bowl, whisk together the eggs, milk, and vanilla extract.
  • Cook the Roll-Ups:

    • In a skillet, melt a small amount of butter over medium heat.
    • Dip each roll-up into the egg mixture, coating completely, and place them seam side down in the skillet.
    • Cook each roll-up for 2-3 minutes, turning frequently until all sides are golden brown.
  • Coat in Cinnamon Sugar:

    • In a shallow dish, mix together the granulated sugar and ground cinnamon.
    • Roll each cooked roll-up in the cinnamon sugar mixture while still warm, ensuring they are well coated.
  • Serve:

    • Serve the roll-ups warm with a dusting of powdered sugar, maple syrup, or a drizzle of cream cheese icing if desired.
