Description

These Cinnamon Roll French Toast Bites are soft, buttery, and coated in cinnamon sugar. Drizzled with a sweet glaze, they make the perfect bite-sized breakfast or brunch treat!

  • 1 can (12 oz) refrigerated cinnamon rolls (or 4 thick slices of brioche bread, cubed)
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1 tablespoon butter (for cooking)
For the Cinnamon Sugar Coating:
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
For the Glaze:
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla extract

Instructions

Prepare the French Toast Bites:

  1. Cut the Cinnamon Rolls:

    • If using refrigerated cinnamon rolls, cut each roll into 4 pieces.
    • If using bread, cut into 1-inch cubes.
  2. Make the Egg Mixture:

    • In a bowl, whisk together eggs, milk, vanilla, cinnamon, and nutmeg.
  3. Dip the Bites:

    • Coat each cinnamon roll piece or bread cube in the egg mixture.

Cook the Bites:

  1. Heat the Butter:

    • In a large skillet or griddle, melt butter over medium heat.
  2. Cook Until Golden:

    • Add the dipped bites and cook for 2-3 minutes per side until golden brown and cooked through.
  3. Coat in Cinnamon Sugar:

    • Toss warm French toast bites in the cinnamon sugar mixture.

Make the Glaze & Serve:

  1. Prepare the Glaze:

    • Whisk together powdered sugar, milk, and vanilla until smooth.
  2. Drizzle & Enjoy:

    • Drizzle the glaze over the warm bites and serve immediately!

 



Notes

  • Want extra crunch? Add chopped pecans or walnuts on top.
  • Make it creamier by replacing milk with half-and-half.
