For the French Toast Bites:
- 1 can (12 oz) refrigerated cinnamon rolls (or 4 thick slices of brioche bread, cubed)
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg (optional)
- 1 tablespoon butter (for cooking)
For the Cinnamon Sugar Coating:
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
For the Glaze:
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/2 teaspoon vanilla extract

Prepare the French Toast Bites:

Cut the Cinnamon Rolls:
- If using refrigerated cinnamon rolls, cut each roll into 4 pieces.
- If using bread, cut into 1-inch cubes.

- In a bowl, whisk together eggs, milk, vanilla, cinnamon, and nutmeg.

Dip the Bites:
- Coat each cinnamon roll piece or bread cube in the egg mixture.
Cook the Bites:

- In a large skillet or griddle, melt butter over medium heat.

- Add the dipped bites and cook for 2-3 minutes per side until golden brown and cooked through.

Coat in Cinnamon Sugar:
- Toss warm French toast bites in the cinnamon sugar mixture.

- Whisk together powdered sugar, milk, and vanilla until smooth.

Notes
- Want extra crunch? Add chopped pecans or walnuts on top.
- Make it creamier by replacing milk with half-and-half.
