Description

These cinnamon applesauce muffins are soft, moist, and bursting with warm spices. Made with applesauce and a hint of cinnamon, they’re perfect for breakfast, a snack, or even dessert. Plus, they’re quick to whip up and kid-friendly!

For the Muffins:

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1 tsp vanilla extract

For the Cinnamon Sugar Topping (optional):

  • 2 tbsp granulated sugar
  • 1/2 tsp ground cinnamon
  • 2 tbsp melted butter

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
  2. Mix the Dry Ingredients:
    • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).
  3. Combine the Wet Ingredients:
    • In a separate bowl, whisk the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs, applesauce, and vanilla extract, mixing until fully combined.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix to keep the muffins light and fluffy.
  5. Fill the Muffin Tin:
    • Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  6. Bake:
    • Bake for 18–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack.
  7. Add the Cinnamon Sugar Topping (optional):
    • In a small bowl, mix the sugar and cinnamon for the topping. Brush the tops of the warm muffins with melted butter and sprinkle with the cinnamon sugar mixture.



Notes

  • For extra moisture, you can add 1/4 cup of sour cream or Greek yogurt to the batter.
  • Mix in 1/2 cup of raisins, chopped nuts, or diced apples for added texture.
  • These muffins freeze well! Wrap individually and store in the freezer for up to 3 months.
