  • 4 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. In a large bowl, combine the green cabbage, purple cabbage, carrots, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, black pepper, and garlic powder.
  3. Pour the dressing over the slaw and toss well to coat evenly.
  4. Let the slaw sit for at least 10 minutes before serving to allow flavors to meld.
