  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice (about 1 lime)
  • 1 tablespoon rice vinegar
  • 1 tablespoon vegan oyster sauce (optional)
  • 1 tablespoon agave syrup or honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt, to taste
  • Optional toppings: additional chopped cilantro, toasted sesame seeds, sliced green onions

Instructions

  • Cook the Noodles: Prepare the noodles according to the package instructions. Once cooked, drain and rinse them under cold water to prevent sticking. Set aside.
  • Prepare the Sauce: In a large mixing bowl, combine the chopped cilantro, minced garlic, red pepper flakes, sesame oil, soy sauce, lime juice, rice vinegar, vegan oyster sauce (if using), and agave syrup. Mix well to create a cohesive sauce.
  • Combine Noodles and Sauce: Add the cooked noodles to the bowl with the sauce. Toss thoroughly until the noodles are evenly coated with the sauce.
  • Serve: Divide the noodles into serving bowls. Garnish with additional chopped cilantro, toasted sesame seeds, and sliced green onions if desired. Serve immediately and enjoy!

  • Noodle Choice: Rice noodles are recommended for their light texture, but feel free to use any noodles you prefer, such as soba, udon, or even spaghetti.
  • Spice Level: Adjust the amount of red pepper flakes to suit your heat preference. For a milder dish, reduce the quantity or omit entirely.
