Scale
- 1 cup water
- 2 tbsp unsalted butter
- 1 tbsp granulated sugar
- 1/4 tsp salt
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 tsp vanilla extract
- Vegetable oil, for frying
- 1/2 cup granulated sugar (for coating)
- 1 tsp ground cinnamon
Instructions
- In a saucepan over medium heat, combine water, butter, sugar, and salt. Bring to a boil, then remove from heat.
- Stir in flour all at once until a dough forms and pulls away from the sides of the pan.
- Let the dough cool for 5 minutes. Add eggs one at a time, mixing well after each, then stir in vanilla. Dough will be sticky and thick.
- Heat 2–3 inches of oil in a deep pan to 350°F (175°C).
- Transfer dough to a piping bag fitted with a large round or star tip (or use a small scoop).
- Pipe or scoop small mounds of dough directly into hot oil, cutting with scissors or using a spoon. Fry in batches for 2–3 minutes, until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- In a bowl, mix sugar and cinnamon. Toss warm churro bites in the mixture to coat.
- Serve immediately, optionally with chocolate or caramel dipping sauce.
Notes
- Don’t overcrowd the fryer; cook in batches for even browning.
- If dough is too runny, let it rest slightly or chill before piping.
- These are best eaten warm right after frying.
- Try flavoring the sugar coating with a pinch of nutmeg or cardamom for variation.
