- 1 cup (230g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp almond extract (optional, for extra flavor)
- 2 1/2 cups (310g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Red, green, and white sprinkles or nonpareils
Instructions
-
Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
-
Make the Cookie Dough:
- In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and almond extract (if using), and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
-
Shape the Cookies:
- Roll the dough into small balls, about 1/2 inch in diameter (about 1 teaspoon of dough per ball).
- Roll each ball in the red, green, and white sprinkles, pressing gently so the sprinkles stick.
-
Bake:
- Place the cookie balls on the prepared baking sheet, about 1 inch apart.
- Bake for 8-10 minutes, or until the edges are set but the centers are still soft (do not overbake).
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
-
Serve:
- Serve your Christmas Sugar Cookie Bites or store them in a festive jar for gifting!
Notes
- Add color: You can add a few drops of food coloring to the dough for more festive colors.
- Make it fancy: Drizzle cooled cookie bites with white or dark chocolate for extra flavor.
- Storage: Store in an airtight container at room temperature for up to a week or freeze for up to 2 months.
