Description

These Christmas Shortbread Cookie Bites are buttery, bite-sized treats that melt in your mouth. Decorated with festive holiday sprinkles, they’re perfect for sharing during the holiday season or adding to your cookie trays.

Ingredients

Scale
  • 1 cup (225 g) unsalted butter, softened
  • 1/2 cup (60 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup (40 g) holiday sprinkles

Instructions

1. Preheat the oven

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

2. Make the dough

  1. In a large mixing bowl, beat the softened butter and powdered sugar together until smooth and creamy.
  2. Mix in the vanilla extract.
  3. Add the flour and salt, mixing just until the dough comes together. Do not overmix.
  4. Gently fold in the holiday sprinkles, ensuring they’re evenly distributed throughout the dough.

3. Shape the cookie bites

  1. Roll the dough into small balls (about the size of a marble or 1/2-inch diameter).
  2. Place the dough balls on the prepared baking sheets, spacing them about 1 inch apart.

4. Bake

  • Bake in the preheated oven for 8–10 minutes, or until the edges are just starting to turn golden.

5. Cool and serve

  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  2. Store in an airtight container, or package them in decorative tins for gifting.

Notes

  • Make-ahead: The dough can be prepared and stored in the refrigerator for up to 2 days before baking.
  • Storage: Store the cookies in an airtight container at room temperature for up to 1 week, or freeze for up to 3 months.
  • Decorating tip: Roll the cookie bites in sprinkles or sanding sugar before baking for extra color.
