Ingredients

Units Scale
  • For the filling:
    • 1 lb (450g) ground sausage meat (pork or a mix of pork and turkey)
    • 1/4 cup dried cranberries, chopped
    • 1/4 cup fresh breadcrumbs
    • 1 small onion, finely diced
    • 1 clove garlic, minced
    • 1/4 cup fresh parsley, finely chopped
    • 1 tsp dried sage or thyme
    • 1/2 tsp ground nutmeg
    • 1/4 tsp ground cinnamon
    • Salt and pepper, to taste
  • For assembly:
    • 1 sheet of puff pastry (store-bought or homemade)
    • 1 egg, beaten (for egg wash)
    • Sesame seeds or poppy seeds (optional, for garnish)

Instructions

  • Prepare the filling:
    • In a large bowl, combine the sausage meat, chopped cranberries, breadcrumbs, onion, garlic, parsley, sage, nutmeg, cinnamon, salt, and pepper. Mix until evenly combined.
  • Prepare the pastry:
    • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
    • Roll out the puff pastry on a lightly floured surface to a rectangle about 1/8-inch thick. Cut into 2 long strips.
  • Assemble the rolls:
    • Divide the sausage filling in half and shape each portion into a long log. Place each log along the edge of a pastry strip.
    • Roll the pastry around the filling, sealing the edges with a little beaten egg. Trim any excess pastry.
  • Cut and garnish:
    • Slice each log into 2-inch pieces and arrange them on the prepared baking sheet, seam side down.
    • Brush the tops with the remaining egg wash and sprinkle with sesame seeds or poppy seeds, if desired.
  • Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the sausage filling is cooked through.
  • Cool and serve:
    • Allow the sausage rolls to cool slightly on a wire rack before serving. Serve warm or at room temperature with a side of cranberry sauce or mustard for dipping.

Notes

  • For extra festive flavor, add a tablespoon of orange zest to the filling.
  • These can be prepared ahead of time and frozen unbaked. Bake from frozen, adding an extra 5-10 minutes to the cook time.
