Packed with flavorful sausage filling, enhanced with holiday spices, cranberries, and fresh herbs, they’re wrapped in golden, flaky puff pastry. - For the filling:
- 1 lb (450g) ground sausage meat (pork or a mix of pork and turkey)
- 1/4 cup dried cranberries, chopped
- 1/4 cup fresh breadcrumbs
- 1 small onion, finely diced
- 1 clove garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1 tsp dried sage or thyme
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cinnamon
- Salt and pepper, to taste
- For assembly:
- 1 sheet of puff pastry (store-bought or homemade)
- 1 egg, beaten (for egg wash)
- Sesame seeds or poppy seeds (optional, for garnish)
Instructions
- Prepare the filling:
- In a large bowl, combine the sausage meat, chopped cranberries, breadcrumbs, onion, garlic, parsley, sage, nutmeg, cinnamon, salt, and pepper. Mix until evenly combined.
- Prepare the pastry:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface to a rectangle about 1/8-inch thick. Cut into 2 long strips.
- Assemble the rolls:
- Divide the sausage filling in half and shape each portion into a long log. Place each log along the edge of a pastry strip.
- Roll the pastry around the filling, sealing the edges with a little beaten egg. Trim any excess pastry.
- Cut and garnish:
- Slice each log into 2-inch pieces and arrange them on the prepared baking sheet, seam side down.
- Brush the tops with the remaining egg wash and sprinkle with sesame seeds or poppy seeds, if desired.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the sausage filling is cooked through.
- Cool and serve:
- Allow the sausage rolls to cool slightly on a wire rack before serving. Serve warm or at room temperature with a side of cranberry sauce or mustard for dipping.
Notes
- For extra festive flavor, add a tablespoon of orange zest to the filling.
- These can be prepared ahead of time and frozen unbaked. Bake from frozen, adding an extra 5-10 minutes to the cook time.
