Ingredients

Units Scale
  • For the Salad:
    • 4 cups mixed salad greens (arugula, spinach, or spring mix)
    • 1 cup pomegranate seeds
    • 1 green apple, thinly sliced
    • 1/2 cup dried cranberries
    • 1/2 cup crumbled feta cheese (or goat cheese)
    • 1/2 cup candied pecans or walnuts
  • For the Vinaigrette:
    • 1/4 cup olive oil
    • 2 tablespoons apple cider vinegar
    • 1 tablespoon honey or maple syrup
    • 1 teaspoon Dijon mustard
    • Salt and pepper, to taste

Instructions

  1. Prepare the Vinaigrette:
    • In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Adjust seasoning as needed. Set aside.
  2. Assemble the Salad:
    • In a large serving bowl, layer the mixed greens, pomegranate seeds, apple slices, dried cranberries, feta cheese, and candied nuts.
  3. Dress the Salad:
    • Drizzle the vinaigrette over the salad just before serving. Toss gently to combine, or serve with the dressing on the side.

Notes

  • For extra protein, add sliced grilled chicken, roasted turkey, or smoked salmon.
  • Substitute pears for the apples, or use both for a mix of flavors.
  • Make it vegan by omitting the cheese and using maple syrup in the dressing.
