Christmas Cookie Bars are festive, buttery bars packed with holiday flavors like vanilla, colorful sprinkles, chocolate chips, and white chocolate chunks. These soft and chewy bars are easy to make and perfect for holiday gatherings, cookie exchanges, or just a sweet treat during the holiday season!

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 cup (170g) white chocolate chips or chunks
  • 1/2 cup (80g) red and green holiday sprinkles
  • Extra sprinkles, for topping

Instructions

 

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. Make the Dough:
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
    • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  3. Combine the Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Add Mix-ins:
    • Fold in the semi-sweet chocolate chips, white chocolate chips, and holiday sprinkles.
  5. Press into Pan:
    • Spread the dough evenly into the prepared 9×13-inch pan. Use a spatula to smooth the top.
    • Sprinkle additional holiday sprinkles over the top for a festive touch.
  6. Bake:
    • Bake for 20-25 minutes, or until the edges are lightly golden and the center is set.
    • Let the bars cool completely in the pan before slicing into squares.
  7. Serve:
    • Cut into 16-20 squares and serve! These bars are perfect with a cup of hot cocoa or as part of a holiday dessert spread.

Notes

  • Make it colorful: Add red and green M&M’s or chopped peppermint bark for more holiday cheer.
  • Make ahead: Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
