For the Queso Fundido:
- 1/2 lb Mexican chorizo, casings removed
- 1 small onion, finely diced
- 1 jalapeño, finely chopped (optional, for spice)
- 2 cloves garlic, minced
- 1/2 teaspoon cumin (optional, for extra flavor)
- 2 cups shredded Oaxaca or mozzarella cheese (for that stretchy pull!)
- 1 cup shredded Monterey Jack or cheddar (for extra flavor)
For Garnish:
- Fresh cilantro, chopped
- Diced tomatoes or pico de gallo

Instructions
Step 1: Cook the Chorizo
- Preheat oven to 400°F (200°C).
- Heat a cast-iron skillet or oven-safe pan over medium heat.
- Add chorizo and cook, breaking it apart, until browned and crispy (5 minutes).
- Stir in onion and jalapeño, cooking until soft (2-3 minutes).
- Add garlic and cumin, stirring for 30 seconds until fragrant.
Step 2: Melt the Cheese
- Turn off the heat and spread the cooked chorizo evenly in the skillet.
- Sprinkle shredded cheeses on top, covering the chorizo.
Step 3: Bake Until Bubbly
- Transfer the skillet to the oven and bake for 10-12 minutes, until the cheese is fully melted and bubbly.
- For a golden, slightly crispy top, broil for 1-2 minutes at the end.
Step 4: Serve Immediately!
- Garnish with chopped cilantro, diced tomatoes, and sliced jalapeños.
- Serve hot and melty with warm tortillas or tortilla chips.
