Description

Chocolate Raspberry Bavarois is a light, elegant French dessert made with silky chocolate mousse layered with a tart raspberry bavarian cream, perfect for special occasions.


Ingredients

  • 1 cup fresh raspberries
  • 2 tablespoons sugar (for raspberries)
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 2 teaspoons unflavored gelatin (divided)
  • 1 1/4 cups heavy cream (divided)
  • 4 oz dark chocolate, finely chopped
  • 2 tablespoons sugar (for chocolate mixture)
  • 2 egg yolks
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a small saucepan, combine raspberries, 2 tablespoons sugar, lemon juice, and 1 tablespoon water. Cook over medium heat until raspberries break down, about 5 minutes. Strain through a fine mesh to remove seeds.
  2. Bloom 1 teaspoon gelatin in 1 tablespoon cold water. Heat the raspberry purée slightly and stir in bloomed gelatin until dissolved. Let cool slightly.
  3. Whip 1/2 cup heavy cream to soft peaks and gently fold into the cooled raspberry mixture. Set aside.
  4. For the chocolate layer, bloom the remaining 1 teaspoon gelatin in 1 tablespoon cold water.
  5. In a saucepan, heat milk until just simmering. In a bowl, whisk egg yolks and 2 tablespoons sugar, then slowly whisk in the hot milk.
  6. Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened slightly (do not boil).
  7. Remove from heat and stir in bloomed gelatin and chopped chocolate until smooth. Add vanilla extract.
  8. Whip the remaining 3/4 cup heavy cream to soft peaks and fold into the cooled chocolate mixture.
  9. Layer the chocolate and raspberry mixtures into serving glasses or molds. Chill for at least 4 hours or until set.
  10. Garnish with fresh raspberries and shaved chocolate before serving.

Notes

  • Use high-quality chocolate for a richer flavor.
  • Make sure mixtures are cooled to room temperature before folding in whipped cream to prevent melting.
  • Perfect to make ahead the night before serving.
