- 1/2 cup creamy peanut butter
- 2 cups crispy rice cereal or crushed graham crackers
- 1/4 cup chopped peanuts (optional)
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Optional topping: flaky sea salt or melted white chocolate for drizzling
Instructions
- Melt the chocolate and peanut butter:
- In a microwave-safe bowl, combine the chocolate chips and peanut butter.
- Heat in 30-second intervals, stirring in between, until smooth and fully melted.
- Stir in vanilla extract and a pinch of salt.
- Combine with dry ingredients:
- In a large mixing bowl, add the crispy rice cereal (or graham crackers) and chopped peanuts (if using).
- Pour the melted chocolate mixture over the dry ingredients and gently mix until fully coated.
- Form the stacks:
- Line a baking sheet with parchment paper.
- Drop spoonfuls of the mixture onto the sheet, shaping into small stacks or clusters.
- Chill to set:
- Place the baking sheet in the refrigerator for 30 minutes, or until the stacks are firm and set.
- Decorate (optional):
- Drizzle melted white chocolate over the stacks or sprinkle with flaky sea salt for a finishing touch.
- Serve:
- Remove from the fridge and enjoy! Store leftovers in an airtight container in the refrigerator.
