Description

Chocolate Peanut Butter Stacks are a no-bake treat combining creamy peanut butter, crunchy ingredients, and a rich chocolate coating. These bite-sized delights are perfect for satisfying your sweet tooth and make an excellent snack or dessert!

Ingredients

Units Scale
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 2 cups crispy rice cereal or crushed graham crackers
  • 1/4 cup chopped peanuts (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional topping: flaky sea salt or melted white chocolate for drizzling

Instructions

  1. Melt the chocolate and peanut butter:
    • In a microwave-safe bowl, combine the chocolate chips and peanut butter.
    • Heat in 30-second intervals, stirring in between, until smooth and fully melted.
    • Stir in vanilla extract and a pinch of salt.
  2. Combine with dry ingredients:
    • In a large mixing bowl, add the crispy rice cereal (or graham crackers) and chopped peanuts (if using).
    • Pour the melted chocolate mixture over the dry ingredients and gently mix until fully coated.
  3. Form the stacks:
    • Line a baking sheet with parchment paper.
    • Drop spoonfuls of the mixture onto the sheet, shaping into small stacks or clusters.
  4. Chill to set:
    • Place the baking sheet in the refrigerator for 30 minutes, or until the stacks are firm and set.
  5. Decorate (optional):
    • Drizzle melted white chocolate over the stacks or sprinkle with flaky sea salt for a finishing touch.
  6. Serve:
    • Remove from the fridge and enjoy! Store leftovers in an airtight container in the refrigerator.

Notes

  • You can substitute peanut butter with almond butter or sunflower seed butter for a nut-free option.
  • Add mini marshmallows or dried cranberries for extra texture and flavor.
