Instructions
1. Prepare the Filling:
- In a medium bowl, combine the chopped pecans, graham cracker crumbs, brown sugar, melted butter, corn syrup, vanilla extract, cinnamon (if using), and salt. Mix until fully combined.
- Scoop about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used. Place the balls on a parchment-lined baking sheet and freeze for 30 minutes to firm up.
2. Melt the Chocolate:
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is melted and smooth.
- Alternatively, melt the chocolate using a double boiler on the stovetop.
3. Coat the Balls:
- Using a fork or a dipping tool, dip each frozen pecan ball into the melted chocolate, ensuring it’s fully coated. Let the excess chocolate drip off.
- Place the coated balls back onto the parchment-lined baking sheet. Sprinkle with a few chopped pecans or sea salt for decoration, if desired.
4. Chill and Serve:
- Refrigerate the chocolate-covered balls for about 20 minutes, or until the chocolate is set.
- Store the balls in an airtight container in the refrigerator for up to a week or in the freezer for longer storage.
