- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1 cup chocolate chips or chunks
- 1/2 cup crushed peppermint candies or mint chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat butter, granulated sugar, and brown sugar until creamy.
- Add egg, vanilla extract, and peppermint extract. Mix until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in chocolate chips and crushed peppermint candies if using.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are set and the centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra mint flavor, top cookies with a drizzle of melted mint chocolate after baking.
- Dough can be chilled for 30 minutes for a thicker cookie.
- Store in an airtight container for up to 1 week.
