Scale
- 1 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1 tbsp granulated sugar
- 1/4 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1/4 cup cold milk
- 1/2 cup chocolate fudge or thick chocolate spread (for filling)
- 1/2 cup powdered sugar (for glaze)
- 2 tbsp unsweetened cocoa powder (for glaze)
- 2–3 tbsp milk (for glaze)
- 1/4 tsp vanilla extract (for glaze)
- Sprinkles or mini chocolate chips (optional, for topping)
Instructions
- In a bowl, whisk together flour, cocoa powder, sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
- Add cold milk and mix just until dough comes together. Form into a disc, wrap, and refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll out chilled dough on a lightly floured surface to about 1/8 inch thickness. Cut into rectangles (about 3×4 inches).
- Place half the rectangles on the baking sheet. Spoon 1–2 teaspoons of chocolate fudge in the center of each, leaving a border.
- Top with the remaining rectangles. Press edges with a fork to seal and prick tops with a fork to vent.
- Bake for 15–18 minutes or until set. Let cool completely before glazing.
- For the glaze, whisk powdered sugar, cocoa powder, milk, and vanilla until smooth. Spread over cooled pop-tarts and add sprinkles if desired.
Notes
- Dough can be made ahead and stored in the fridge for up to 2 days.
- Store finished pop-tarts in an airtight container at room temperature for up to 3 days.
- Reheat briefly in the microwave or toaster oven for a warm treat.
