For the Cookies:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp strawberry extract
- 1–2 drops pink gel food coloring (optional)
- 1 1/2 cups all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
For the Chocolate Topping:
- 1 cup semi-sweet chocolate chips or dark chocolate, melted
- 1/4 cup white chocolate, melted (optional, for drizzling)
Optional Garnish:
- Freeze-dried strawberries, crushed
- Valentine’s sprinkles
Instructions
- Prepare the Cookie Dough:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, strawberry extract, and pink food coloring (if using) until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Shape and Bake:
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten the tops of the dough balls with your fingers or the bottom of a glass.
- Bake for 10–12 minutes, or until the edges are set. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Add the Chocolate Topping:
- Once the cookies are completely cool, dip the tops of each cookie into the melted semi-sweet chocolate, allowing the excess to drip off.
- Place the cookies on parchment paper and drizzle with melted white chocolate, if desired.
- Decorate and Set:
- Sprinkle crushed freeze-dried strawberries or Valentine’s sprinkles onto the chocolate while it’s still wet.
- Let the chocolate set at room temperature, or refrigerate for 10–15 minutes until firm.
- Serve:
- Serve immediately or store in an airtight container for up to 3 days.
Notes
- For a shortcut, use a strawberry-flavored boxed cookie mix and prepare according to package directions, then dip in chocolate.
- Use milk chocolate or dark chocolate based on your preference.
