  • 12 drops pink gel food coloring (optional)

  • 1/4 tsp baking powder
  • 1/4 tsp salt

For the Chocolate Topping:

  • 1 cup semi-sweet chocolate chips or dark chocolate, melted
  • 1/4 cup white chocolate, melted (optional, for drizzling)

  • Freeze-dried strawberries, crushed

Instructions

  1. Prepare the Cookie Dough:
    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a large bowl, cream the butter and granulated sugar until light and fluffy.
    • Beat in the egg, vanilla extract, strawberry extract, and pink food coloring (if using) until well combined.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  2. Shape and Bake:
    • Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
    • Gently flatten the tops of the dough balls with your fingers or the bottom of a glass.
    • Bake for 10–12 minutes, or until the edges are set. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  3. Add the Chocolate Topping:
    • Once the cookies are completely cool, dip the tops of each cookie into the melted semi-sweet chocolate, allowing the excess to drip off.
    • Place the cookies on parchment paper and drizzle with melted white chocolate, if desired.
  4. Decorate and Set:
    • Sprinkle crushed freeze-dried strawberries or Valentine’s sprinkles onto the chocolate while it’s still wet.
    • Let the chocolate set at room temperature, or refrigerate for 10–15 minutes until firm.
  5. Serve:
    • Serve immediately or store in an airtight container for up to 3 days.

  • For a shortcut, use a strawberry-flavored boxed cookie mix and prepare according to package directions, then dip in chocolate.
  • Use milk chocolate or dark chocolate based on your preference.
