Indulge in these delightful Chocolate Covered Cherry Brownie Bombs—bite-sized treats featuring a luscious cherry encased in rich, fudgy brownie, all enveloped in a smooth chocolate coating. Perfect for special occasions or a sweet indulgence anytime.

Ingredients

Scale

  • 1 box (approximately 18.3 ounces) of chewy fudge brownie mix
  • Ingredients as specified on the brownie mix box (typically eggs, oil, and water)
  • ¾ cup chocolate frosting
  • 1 jar (10 ounces) maraschino cherries, drained and patted dry
  • 15 ounces almond bark or chocolate melting wafers

Instructions

  1. Prepare the Brownies: Follow the instructions on the brownie mix box to prepare and bake the brownies. Once baked, allow them to cool completely.
  2. Crumble and Mix: Crumble the cooled brownies into a large mixing bowl. Add the chocolate frosting and mix until the mixture reaches a consistency that holds together when formed into a ball.
  3. Form the Bombs: Take approximately 1½ tablespoons of the brownie mixture and flatten it slightly in your hand. Place a maraschino cherry in the center and wrap the brownie mixture around it, rolling it into a ball to fully encase the cherry. Repeat with the remaining mixture and cherries.
  4. Chill: Place the brownie balls on a baking sheet lined with parchment paper and refrigerate for about 20 minutes to firm up.
  5. Melt the Chocolate: While the brownie balls are chilling, melt the almond bark or chocolate melting wafers according to the package instructions until smooth.
  6. Coat the Bombs: Using a fork or dipping tool, dip each brownie ball into the melted chocolate, ensuring it is fully coated. Allow any excess chocolate to drip off before placing the coated bomb back onto the parchment paper.
  7. Set and Serve: Let the chocolate coating set completely. Once set, your Chocolate Covered Cherry Brownie Bombs are ready to enjoy!

Notes

  • For an extra decorative touch, drizzle white chocolate over the top or add sprinkles before the coating sets.
  • Ensure the cherries are well-drained and patted dry to prevent excess moisture from affecting the brownie mixture.
  • These treats can be stored in an airtight container in the refrigerator for up to a week.
