- 1/2 cup (40 g) unsweetened shredded coconut (plus extra for rolling)
- 1/4 cup (20 g) cocoa powder
- 1/4 cup (60 ml) maple syrup or honey
- 1/4 cup (60 g) almond butter (or any nut butter)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1–2 tablespoons water (as needed)
Optional Add-Ins:
- 2 tablespoons mini chocolate chips
- 2 tablespoons chopped almonds for extra crunch
Instructions
- Mix the Dry Ingredients:
- In a large mixing bowl, combine the almond flour, shredded coconut, cocoa powder, and salt. Stir well to combine.
- Add the Wet Ingredients:
- Add the almond butter, maple syrup (or honey), and vanilla extract to the dry mixture. Stir until the mixture starts to come together.
- Adjust the Consistency:
- If the mixture feels too dry, add 1–2 tablespoons of water, a little at a time, until it forms a sticky dough that holds together when pressed.
- Form the Balls:
- Scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture.
- Coat with Coconut (Optional):
- Roll each ball in additional shredded coconut for a decorative and flavorful coating.
- Chill:
- Place the balls on a plate or in a container and refrigerate for at least 20 minutes to firm up.
- Serve:
- Enjoy chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
Notes
- Nut-Free Option: Replace almond butter with sunflower seed butter and almond flour with oat flour.
- Add Protein: Mix in 1 scoop of chocolate protein powder and adjust with extra water if needed.
- Sweeter Option: Drizzle melted dark chocolate over the balls for a decadent touch.
