Description

These Chocolate Coconut Almond Balls are a no-bake, healthy snack that combines rich chocolate, nutty almonds, and sweet coconut. Perfect for satisfying your sweet tooth, these bite-sized treats are easy to make and ideal for meal prep or as an on-the-go energy boost.


Ingredients

  • 1/2 cup (40 g) unsweetened shredded coconut (plus extra for rolling)
  • 1/4 cup (20 g) cocoa powder
  • 1/4 cup (60 ml) maple syrup or honey
  • 1/4 cup (60 g) almond butter (or any nut butter)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 12 tablespoons water (as needed)

Optional Add-Ins:

  • 2 tablespoons mini chocolate chips
  • 2 tablespoons chopped almonds for extra crunch



Instructions

  1. Mix the Dry Ingredients:
    • In a large mixing bowl, combine the almond flour, shredded coconut, cocoa powder, and salt. Stir well to combine.
  2. Add the Wet Ingredients:
    • Add the almond butter, maple syrup (or honey), and vanilla extract to the dry mixture. Stir until the mixture starts to come together.
  3. Adjust the Consistency:
    • If the mixture feels too dry, add 1–2 tablespoons of water, a little at a time, until it forms a sticky dough that holds together when pressed.
  4. Form the Balls:
    • Scoop out about 1 tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture.
  5. Coat with Coconut (Optional):
    • Roll each ball in additional shredded coconut for a decorative and flavorful coating.
  6. Chill:
    • Place the balls on a plate or in a container and refrigerate for at least 20 minutes to firm up.
  7. Serve:
    • Enjoy chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
