These Chocolate Chip Peanut Butter Granola Cookie Bars are chewy, nutty, and packed with oats, chocolate chips, and creamy peanut butter—perfect as a snack, lunchbox treat, or easy dessert.

- 1/2 cup unsalted butter, melted
- 1/2 cup creamy peanut butter
- 1/2 cup brown sugar
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
- In a large bowl, whisk together melted butter, peanut butter, brown sugar, and honey until smooth.
- Add the egg and vanilla extract and mix until combined.
- Stir in oats, flour, baking soda, and salt until well mixed.
- Fold in chocolate chips, reserving a few to sprinkle on top if desired.
- Press dough evenly into the prepared baking dish. Sprinkle with remaining chocolate chips.
- Bake for 20–25 minutes, or until the edges are golden and the center is set.
- Let cool completely in the pan before cutting into bars.
Notes
- Substitute almond or sunflower butter for a peanut-free version.
- Add chopped nuts or dried fruit for more texture and flavor.
- Bars can be stored in an airtight container at room temperature for up to 5 days or frozen for longer storage.
