Description

These Chocolate Chip Peanut Butter Granola Cookie Bars are chewy, nutty, and packed with oats, chocolate chips, and creamy peanut butter—perfect as a snack, lunchbox treat, or easy dessert.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, whisk together melted butter, peanut butter, brown sugar, and honey until smooth.
  3. Add the egg and vanilla extract and mix until combined.
  4. Stir in oats, flour, baking soda, and salt until well mixed.
  5. Fold in chocolate chips, reserving a few to sprinkle on top if desired.
  6. Press dough evenly into the prepared baking dish. Sprinkle with remaining chocolate chips.
  7. Bake for 20–25 minutes, or until the edges are golden and the center is set.
  8. Let cool completely in the pan before cutting into bars.

Notes

  • Substitute almond or sunflower butter for a peanut-free version.
  • Add chopped nuts or dried fruit for more texture and flavor.
  • Bars can be stored in an airtight container at room temperature for up to 5 days or frozen for longer storage.
