These Chocolate Cake Mix Cookies are rich, chewy, and unbelievably easy to make with just a few ingredients! Perfect for a quick treat or last-minute dessert, they’re customizable and always a crowd favorite.
Ingredients
-
1 (15.25 oz) box chocolate cake mix (like devil’s food or chocolate fudge)
-
1/2 cup vegetable oil
-
2 large eggs
-
Optional mix-ins:
-
1 cup chocolate chips
-
1/2 cup chopped nuts
-
1/2 cup M&M’s or peanut butter chips
-
Instructions
-
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
-
In a large bowl, combine the cake mix, oil, and eggs. Stir until a soft dough forms.
-
Fold in any desired mix-ins.
-
Roll dough into 1-inch balls and place 2 inches apart on the prepared baking sheet.
-
Bake for 9–11 minutes, or until edges are set but centers are still soft.
-
Let cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
Notes
-
For fudgier cookies, use only ¼ cup oil and chill the dough for 15 minutes before baking.
-
These freeze well—baked or as dough!
-
Try using different flavored cake mixes (like red velvet or spice) for fun variations.
