- 4 cups chopped romaine or iceberg lettuce
- 1 cup cherry tomatoes, halved
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh or thawed frozen)
- 1 red bell pepper, diced
- 1/4 cup red onion, finely diced
- 1 avocado, diced
- 1 cup shredded sharp cheddar cheese
- 1/4 cup fresh cilantro, chopped
- 1/3 cup mayonnaise
- 2 tbsp Greek yogurt or sour cream
- 1–2 tbsp chipotle peppers in adobo sauce, minced
- 1 tbsp lime juice
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together mayonnaise, Greek yogurt, minced chipotle peppers, lime juice, honey, salt, and pepper to make the dressing.
- In a large bowl, combine chopped lettuce, cherry tomatoes, black beans, corn, bell pepper, red onion, avocado, cheddar cheese, and cilantro.
- Drizzle the chipotle dressing over the salad and toss until evenly coated.
- Serve immediately and enjoy!
