Description

A delicious and easy-to-make rice bowl loaded with flavorful chicken, fresh vegetables, and a creamy, tangy yum yum sauce — perfect for meal prep or quick dinners.

  • 500g boneless, skinless chicken breasts or thighs, diced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup shredded cabbage or coleslaw mix
  • 1 avocado, sliced
  • 2 green onions, sliced
  • 1 tbsp sesame seeds (optional)
  • 1 tbsp vegetable oil (for cooking)
  • For Yum Yum Sauce:
  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • 12 tbsp water (to thin, as needed)

Instructions

  1. In a bowl, combine soy sauce, sesame oil, rice vinegar, honey, garlic powder, and ginger powder. Add diced chicken and marinate for 15-30 minutes.
  2. Heat vegetable oil in a skillet over medium heat. Cook chicken for 6-8 minutes, stirring occasionally, until cooked through and browned.
  3. While chicken cooks, prepare the yum yum sauce by whisking together mayonnaise, ketchup, rice vinegar, sugar, and garlic powder. Add water gradually until desired consistency is reached.
  4. To assemble bowls, divide cooked rice into 4 servings. Top with cooked chicken, shredded carrots, cabbage, avocado slices, and green onions.
  5. Drizzle with yum yum sauce and sprinkle sesame seeds on top if using. Serve immediately.
