- 500g boneless, skinless chicken breasts or thighs, diced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp ginger powder
- 2 cups cooked white or brown rice
- 1 cup shredded carrots
- 1 cup shredded cabbage or coleslaw mix
- 1 avocado, sliced
- 2 green onions, sliced
- 1 tbsp sesame seeds (optional)
- 1 tbsp vegetable oil (for cooking)
- For Yum Yum Sauce:
- 1/2 cup mayonnaise
- 1 tbsp ketchup
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp garlic powder
- 1–2 tbsp water (to thin, as needed)
Instructions
- In a bowl, combine soy sauce, sesame oil, rice vinegar, honey, garlic powder, and ginger powder. Add diced chicken and marinate for 15-30 minutes.
- Heat vegetable oil in a skillet over medium heat. Cook chicken for 6-8 minutes, stirring occasionally, until cooked through and browned.
- While chicken cooks, prepare the yum yum sauce by whisking together mayonnaise, ketchup, rice vinegar, sugar, and garlic powder. Add water gradually until desired consistency is reached.
- To assemble bowls, divide cooked rice into 4 servings. Top with cooked chicken, shredded carrots, cabbage, avocado slices, and green onions.
- Drizzle with yum yum sauce and sprinkle sesame seeds on top if using. Serve immediately.
