Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz egg noodles (or your favorite pasta)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon dried Italian seasoning (or a mix of dried basil and parsley)
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Noodles: In a large pot, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  • Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5-7 minutes, or until golden and cooked through. Remove the chicken from the skillet and set aside.
  • Make the Butter Sauce: In the same skillet, melt 2 tablespoons of butter over medium heat. Add the garlic and Italian seasoning, cooking for 1-2 minutes until fragrant.
  • Combine and Serve: Add the drained noodles and remaining 1 tablespoon of butter to the skillet. Toss to coat the noodles in the butter sauce, then add the chicken back to the skillet. Sprinkle with Parmesan if desired, and garnish with fresh parsley. Serve warm and enjoy!

Notes

  • Add Veggies: Mix in steamed broccoli, peas, or spinach for added nutrition and color.
  • Extra Flavor: For a zesty twist, add a squeeze of fresh lemon juice before serving.
