This Chicken Taco Casserole is a fun twist on classic tacos, combining layers of shredded chicken, tortillas, and melted cheese with delicious taco seasoning. It’s easy to make, loaded with flavor, and perfect for feeding a crowd. Customize it with your favorite taco toppings for a meal everyone will love!

  • 3 cups cooked, shredded chicken (about 2 large chicken breasts)
  • 1 packet taco seasoning (or homemade mix)
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 ½ cups frozen corn kernels, thawed
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend, divided
  • 8 small flour or corn tortillas, cut into quarters
  • Fresh cilantro, chopped (optional, for garnish)
  • Optional toppings: sour cream, diced avocado, chopped green onions, jalapeños

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Mix Filling: In a large bowl, combine the shredded chicken, taco seasoning, diced tomatoes with green chilies, black beans, corn, and salsa. Stir until well-mixed.
  • Assemble Casserole: Lightly grease a 9×13-inch baking dish. Place a layer of tortilla quarters on the bottom of the dish. Spread half of the chicken mixture over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat with another layer of tortillas, remaining chicken mixture, and top with the remaining cheese.
  • Bake: Cover the casserole with foil and bake for 20 minutes. Remove the foil and bake an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve: Garnish with fresh cilantro and serve with optional toppings like sour cream, diced avocado, and green onions.

Notes

  • You can use rotisserie chicken to save time.
  • Adjust the spice level by using mild or hot diced tomatoes and green chilies, or add some hot sauce to the mix.
