- 1.5 lbs boneless skinless chicken thighs
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon oregano
- 8–10 small corn tortillas
- 1/2 cup white onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- Lime wedges, for serving
- Optional toppings: avocado slices, salsa, cotija cheese
Instructions
- In a bowl, mix olive oil, lime juice, orange juice, garlic, chili powder, cumin, paprika, salt, pepper, and oregano.
- Add chicken thighs and toss to coat. Marinate for at least 30 minutes, up to 4 hours.
- Preheat grill or skillet over medium-high heat. Grill chicken for 5–7 minutes per side, until fully cooked.
- Let chicken rest for 5 minutes, then chop into small pieces.
- Warm tortillas in a dry skillet or on the grill until soft and slightly charred.
- Assemble tacos by placing chopped chicken on tortillas and topping with onion, cilantro, and a squeeze of lime.
- Add optional toppings as desired and serve immediately.
Notes
- Chicken breasts can be used, but thighs provide more flavor and tenderness.
- Double the marinade for extra juicy chicken or to reserve some as a drizzle.
- Great for meal prep—store components separately and reheat as needed.
- Use a grill pan indoors if outdoor grilling isn’t available.
