Description

Tender and juicy Greek-style chicken souvlaki marinated in olive oil, lemon, garlic, and herbs, then grilled to perfection.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.
  2. Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably 2-4 hours.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat grill to medium-high heat.
  5. Thread the marinated chicken pieces onto skewers.
  6. Grill the chicken skewers for 10-12 minutes, turning occasionally, until fully cooked and nicely charred.
  7. Serve hot with pita bread, tzatziki sauce, and a fresh Greek salad.

Notes

  • Marinate the chicken overnight for maximum flavor.
  • You can also cook the skewers in the oven or on a stovetop grill pan.
  • Use chicken thighs for a juicier result if preferred.
