Tender and juicy Greek-style chicken souvlaki marinated in olive oil, lemon, garlic, and herbs, then grilled to perfection.

- 1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.
- Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour, preferably 2-4 hours.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- Thread the marinated chicken pieces onto skewers.
- Grill the chicken skewers for 10-12 minutes, turning occasionally, until fully cooked and nicely charred.
- Serve hot with pita bread, tzatziki sauce, and a fresh Greek salad.
Notes
- Marinate the chicken overnight for maximum flavor.
- You can also cook the skewers in the oven or on a stovetop grill pan.
- Use chicken thighs for a juicier result if preferred.
