Description

Chicken Scallopini is a classic Italian-American dish featuring thin slices of chicken breast lightly dredged in flour, sautéed until golden, and simmered in a lemony wine sauce with capers or mushrooms.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 2 tablespoons lemon juice
  • 2 tablespoons capers or 1/2 cup sliced mushrooms
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to about 1/4-inch thickness.
  2. Mix flour, salt, and pepper in a shallow dish. Dredge each chicken piece in the flour mixture, shaking off the excess.
  3. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat.
  4. Add the chicken and cook for 3-4 minutes per side, or until golden and cooked through. Remove and set aside.
  5. In the same skillet, add wine, chicken broth, and lemon juice. Bring to a simmer, scraping up browned bits from the pan.
  6. Add capers or mushrooms and cook for 2-3 minutes.
  7. Return the chicken to the skillet and simmer for another 2-3 minutes, spooning sauce over the top.
  8. Stir in remaining tablespoon of butter for a silky finish and garnish with parsley before serving.

Notes

  • Serve with pasta, mashed potatoes, or a fresh green salad.
  • For a creamier sauce, add a splash of heavy cream at the end.
  • Use chicken tenders or veal as variations.
