- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup vegetable oil (for frying)
- 1 1/2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 4 sub rolls or hoagie rolls
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with foil.
- Flatten chicken breasts slightly for even cooking. Season with salt and pepper.
- Dredge each piece of chicken in flour, dip in beaten eggs, then coat with a mixture of breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
- Heat oil in a large skillet over medium heat. Fry chicken until golden brown and cooked through, about 3-4 minutes per side. Transfer to paper towels to drain.
- Split the sub rolls and place them on the prepared baking sheet. Place a piece of chicken on each roll, spoon marinara sauce over the top, and sprinkle with mozzarella cheese.
- Bake for 10 minutes, or until the cheese is melted and bubbly and the rolls are lightly toasted.
- Garnish with fresh basil or parsley if desired. Serve hot.
Notes
- For a shortcut, use frozen breaded chicken cutlets and jarred marinara sauce.
- You can toast the sub rolls slightly before assembling for added crunch.
- Add crushed red pepper flakes to the marinara for a spicy kick.
