A delicious and hearty sandwich featuring crispy breaded chicken, marinara sauce, and melted mozzarella and Parmesan cheeses, served on a toasted sandwich roll.

- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 4 sandwich rolls or hoagie buns
- Salt and pepper to taste
- Oil for frying
Instructions
- Slice chicken breasts in half horizontally to create 4 thin cutlets. Season with salt and pepper.
- Dredge each cutlet in flour, dip in beaten eggs, then coat with a mixture of breadcrumbs and Parmesan cheese.
- Heat oil in a skillet over medium heat and fry chicken cutlets until golden brown and cooked through, about 3–4 minutes per side. Drain on paper towels.
- Preheat broiler. Place sandwich rolls open-faced on a baking sheet and toast lightly if desired.
- Place a chicken cutlet on each roll. Spoon marinara sauce over the chicken, then top with mozzarella cheese.
- Broil sandwiches for 2–3 minutes, or until cheese is melted and bubbly.
- Close sandwiches and serve hot.
Notes
- Use fresh mozzarella for extra melty texture.
- Try adding fresh basil or a drizzle of balsamic glaze for extra flavor.
- You can bake the breaded chicken instead of frying for a lighter version.
