Description

This crispy, cheesy, and flavorful grilled cheese combines the best of Chicken Parmesan and a classic grilled cheese sandwich. With golden-breaded chicken, gooey melted cheese, marinara sauce, and buttery toasted bread, it’s the ultimate comfort food!

For the Chicken

  • 1 small chicken breast, pounded thin
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • Salt & black pepper, to taste
  • 2 tbsp olive oil (for frying)

For the Sandwich

  • 4 slices of thick bread (sourdough, ciabatta, or Texas toast)
  • 2 tbsp butter, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup marinara sauce
  • Extra Parmesan cheese for topping (optional)



Instructions

1. Bread & Cook the Chicken

  1. Set up three bowls:
    • Bowl 1: Mix flour with garlic powder, Italian seasoning, salt, and pepper.
    • Bowl 2: Beat the egg.
    • Bowl 3: Combine breadcrumbs and Parmesan cheese.
  2. Dredge the chicken breast in flour, dip into egg, then coat with the breadcrumb mixture.
  3. Heat olive oil in a pan over medium heat and cook chicken for 3-4 minutes per side, until golden and cooked through.
  4. Transfer to a plate and slice into thin strips.

2. Assemble the Sandwich

  1. Butter one side of each slice of bread.
  2. On the unbuttered side, layer:
    • Mozzarella cheese
    • Chicken Parmesan strips
    • A spoonful of marinara sauce
    • A sprinkle of extra Parmesan (optional)
    • More mozzarella
  3. Top with another slice of bread, buttered side facing out.

3. Grill the Sandwich

  1. Heat a skillet or griddle over medium heat.
  2. Cook the sandwich for 3-4 minutes per side, pressing lightly with a spatula, until golden brown and cheese is melted.

4. Serve & Enjoy

  • Slice in half and serve with extra marinara sauce for dipping!
