Description

Chicken Madeira is a restaurant-style dish featuring tender chicken breasts, mushrooms, and asparagus in a rich Madeira wine sauce, topped with melted mozzarella cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 lb fresh asparagus, trimmed
  • 1 cup mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tbsp cornstarch mixed with 1 tbsp water (optional, for thickening)
  • Chopped parsley, for garnish

Instructions

  1. Flatten chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, add butter and sauté mushrooms for 5 minutes until browned. Add garlic and cook for 1 minute more.
  4. Pour in Madeira wine and chicken broth. Simmer for 10–15 minutes until reduced by half. Add cornstarch slurry if a thicker sauce is desired.
  5. Meanwhile, blanch asparagus in boiling water for 2–3 minutes until tender-crisp. Drain and set aside.
  6. Return chicken to skillet and spoon sauce over top. Arrange asparagus over chicken and top with shredded mozzarella.
  7. Cover skillet and cook for 2–3 minutes, or until cheese is melted.
  8. Garnish with parsley and serve immediately with mashed potatoes or rice.

Notes

  • Use a meat mallet to flatten chicken for even cooking.
  • Can substitute Marsala wine if Madeira is unavailable.
  • For extra indulgence, finish with a drizzle of cream.
