Description
Chicken Madeira is a restaurant-style dish featuring tender chicken breasts, mushrooms, and asparagus in a rich Madeira wine sauce, topped with melted mozzarella cheese.

- 4 boneless, skinless chicken breasts
- 1 cup Madeira wine
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 lb fresh asparagus, trimmed
- 1 cup mushrooms, sliced
- 2 tbsp butter
- 2 tbsp olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1 tbsp cornstarch mixed with 1 tbsp water (optional, for thickening)
- Chopped parsley, for garnish
Instructions
- Flatten chicken breasts to an even thickness and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add butter and sauté mushrooms for 5 minutes until browned. Add garlic and cook for 1 minute more.
- Pour in Madeira wine and chicken broth. Simmer for 10–15 minutes until reduced by half. Add cornstarch slurry if a thicker sauce is desired.
- Meanwhile, blanch asparagus in boiling water for 2–3 minutes until tender-crisp. Drain and set aside.
- Return chicken to skillet and spoon sauce over top. Arrange asparagus over chicken and top with shredded mozzarella.
- Cover skillet and cook for 2–3 minutes, or until cheese is melted.
- Garnish with parsley and serve immediately with mashed potatoes or rice.
Notes
- Use a meat mallet to flatten chicken for even cooking.
- Can substitute Marsala wine if Madeira is unavailable.
- For extra indulgence, finish with a drizzle of cream.
