- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 4 cups fresh spinach
- 1 tablespoon lemon juice
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side or until golden and cooked through. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add butter and garlic. Sauté until fragrant, about 1 minute.
- Add chicken broth and stir, scraping up any browned bits from the pan.
- Stir in heavy cream, Parmesan, Italian seasoning, and lemon juice. Simmer for 3-4 minutes until slightly thickened.
- Add spinach and cook until wilted, about 2 minutes.
- Return chicken to the pan, spoon sauce over the top, and cook for another 2-3 minutes until heated through.
- Serve hot, garnished with extra Parmesan if desired.
Notes
- Use half-and-half instead of cream for a lighter version.
- Pairs well with pasta, rice, or crusty bread.
- Can be made with boneless thighs if preferred.
