Chicken Fajita Casserole is a one-pan dish with juicy chicken, vibrant bell peppers, onions, and melted cheese. It’s seasoned with classic fajita spices for a comforting meal that can be enjoyed with tortillas, rice, or by itself.

  • 1 lb boneless, skinless chicken breasts, cut into strips
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 1 tbsp fajita seasoning (or use a mix of chili powder, cumin, paprika, and garlic powder)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1/4 cup chopped cilantro (for garnish)
  • Sour cream, guacamole, or salsa (for serving)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the Chicken:

    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the chicken strips, sprinkle with salt, pepper, and half of the fajita seasoning. Cook until the chicken is golden brown and almost cooked through, about 5 minutes. Remove from heat.
  3. Assemble the Casserole:

    • In the prepared baking dish, layer the cooked chicken, sliced bell peppers, and onions. Sprinkle the remaining fajita seasoning over the veggies.
    • Top with shredded cheddar and mozzarella cheese, spreading evenly across the casserole.
  4. Bake:

    • Cover the baking dish with foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Serve:

    • Garnish with chopped cilantro.
    • Serve with sour cream, guacamole, or salsa, and enjoy with tortillas, rice, or on its own.

Notes

  • Add Spice: For a spicier casserole, add sliced jalapeños or a pinch of red pepper flakes.
