- 1 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
- 1 tbsp fajita seasoning (or use a mix of chili powder, cumin, paprika, and garlic powder)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack cheese
- 1/4 cup chopped cilantro (for garnish)
- Sour cream, guacamole, or salsa (for serving)

Preheat the Oven:
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

Cook the Chicken:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken strips, sprinkle with salt, pepper, and half of the fajita seasoning. Cook until the chicken is golden brown and almost cooked through, about 5 minutes. Remove from heat.

Assemble the Casserole:
- In the prepared baking dish, layer the cooked chicken, sliced bell peppers, and onions. Sprinkle the remaining fajita seasoning over the veggies.
- Top with shredded cheddar and mozzarella cheese, spreading evenly across the casserole.

- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
