Thinly sliced chicken is sautéed with onions, peppers, and melty cheese, then piled into a warm hoagie roll for a mouthwatering, satisfying sandwich. Ingredients
For the Chicken Filling:

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts or thighs, thinly sliced

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 medium yellow onion, thinly sliced

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

6 slices provolone cheese
For the Sandwiches:

4 hoagie rolls or sub rolls, toasted

Optional toppings: mayo, hot sauce, mustard, pickled peppers
Instructions

Cook the Chicken:
Heat 1 tablespoon oil in a large skillet over medium-high heat.
Add sliced chicken, season with Italian seasoning, garlic powder, paprika, salt, and pepper.
Sauté until chicken is golden and cooked through, about 5–7 minutes. Transfer to a plate. -
Sauté Veggies:
In the same pan, heat the remaining oil. Add onions and bell peppers.
Cook until soft and slightly caramelized, about 8–10 minutes. -
Combine & Add Cheese:
Return the chicken to the pan with the veggies. Stir to combine and heat through.
Lay provolone slices over the top, cover, and let melt for 2–3 minutes. -
Assemble Sandwiches:
Toast hoagie rolls, if desired.
Spoon the cheesy chicken and veggie mixture into each roll.
Add any extra toppings and serve hot!
