Description

A comforting and creamy chicken broccoli casserole made with tender chicken, fresh broccoli, and a cheesy sauce, baked until golden and bubbly — perfect for a weeknight dinner or meal prep.


Ingredients

  • 3 cups cooked chicken, shredded or cubed
  • 4 cups fresh broccoli florets (or 1 bag frozen, thawed and drained)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup breadcrumbs or crushed crackers (optional topping)
  • 1 tablespoon melted butter (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Steam or blanch broccoli for 3–4 minutes until slightly tender but still bright green. Drain and set aside.
  3. In a large bowl, mix cream of chicken soup, sour cream, milk, garlic powder, salt, and pepper.
  4. Add the cooked chicken, broccoli, and 1 cup of cheddar cheese. Stir to combine.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Top with remaining 1/2 cup cheddar cheese.
  7. If using, mix breadcrumbs with melted butter and sprinkle over the top.
  8. Bake for 25–30 minutes, or until bubbly and golden brown.
  9. Let sit 5 minutes before serving.

  • Use rotisserie chicken for a quick prep option.
  • Add cooked rice or pasta to make it a complete one-dish meal.
