Description

These Chewy Brown Sugar Cookies are soft, rich, and full of caramel-like flavor thanks to the brown sugar. With a slightly crispy edge and a melt-in-your-mouth center, these cookies are perfect for any occasion.


Ingredients

  • 1 3/4 cups packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: 1/4 cup granulated sugar (for rolling)

Instructions

1. Preheat the Oven:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.

2. Mix the Wet Ingredients:

  1. In a large bowl, whisk together the melted butter and brown sugar until smooth and creamy.
  2. Add the egg, egg yolk, and vanilla extract. Whisk until fully combined.

3. Add the Dry Ingredients:

  1. In a separate bowl, whisk together the flour, baking soda, and salt.
  2. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms. Do not overmix.

4. Chill the Dough (Optional but Recommended):

  1. For chewier cookies, chill the dough in the refrigerator for at least 30 minutes.

5. Shape the Cookies:

  1. Scoop about 1 1/2 tablespoons of dough (or use a medium cookie scoop) and roll into balls.
  2. Roll the dough balls in granulated sugar for a crackly texture (optional).
  3. Place the dough balls 2 inches apart on the prepared baking sheets.

6. Bake:

  1. Bake for 9-11 minutes, or until the edges are set and the centers look slightly underbaked.
  2. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
