Description

Cherry Cobbler Muffins are soft, bakery-style muffins filled with sweet cherry pie filling and topped with a buttery streusel crumble. They combine the best of cobbler and muffins in one easy, delicious treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling
  • For the streusel topping:
  • 1/3 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 2 tbsp unsalted butter, cold and cubed

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, and salt.
  3. In another bowl, mix melted butter, buttermilk, eggs, and vanilla until smooth.
  4. Add wet ingredients to dry ingredients and stir until just combined (do not overmix).
  5. Gently fold in the cherry pie filling, allowing a few streaks of cherry to remain.
  6. Divide batter evenly among muffin cups.
  7. To make streusel, combine flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over each muffin.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use homemade cherry compote instead of pie filling for a fresher flavor.
  • Do not overmix batter to keep muffins light and fluffy.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
