Ingredients

Scale
  • 810 egg roll wrappers
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup cherry pie filling
  • 1 large egg, beaten (for sealing)
  • Oil for frying (vegetable or canola oil)

Optional Toppings:

  • Powdered sugar
  • Whipped cream

Instructions

1. Prepare the Filling:

  1. In a medium bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  2. Set aside the cherry pie filling.

2. Assemble the Egg Rolls:

  1. Lay an egg roll wrapper flat on a clean surface, with one corner pointing toward you (diamond shape).
  2. Spread about 1 tablespoon of the cream cheese mixture onto the center of the wrapper. Top with 1-2 tablespoons of cherry pie filling.
  3. Fold the bottom corner over the filling, then fold in the two side corners. Roll the wrapper tightly upward, sealing the top corner with the beaten egg. Repeat with the remaining wrappers and filling.

3. Fry the Egg Rolls:

  1. Heat 2-3 inches of oil in a deep skillet or saucepan to 350°F (175°C).
  2. Fry the egg rolls in batches for 2-3 minutes per side, or until golden brown and crispy.
  3. Remove with a slotted spoon and drain on paper towels.

4. Serve:

  1. Dust the egg rolls with powdered sugar and serve warm with whipped cream or extra cherry pie filling on the side.

Notes

  • Baking Option: For a healthier version, bake the egg rolls at 400°F (200°C) for 15-20 minutes, flipping halfway through. Brush with melted butter or spray with cooking spray before baking.
  • Air Fryer Option: Spray the egg rolls with cooking spray and air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or air fryer to restore crispiness.
