Description

A comforting and hearty casserole featuring crispy tater tots, seasoned ground beef, creamy cheese, and flavorful Rotel tomatoes, perfect for an easy weeknight dinner.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 can (10 oz) Rotel tomatoes with green chilies, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 (32 oz) bag frozen tater tots
  • Cooking spray or butter for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef until browned and cooked through. Drain excess fat.
  3. Stir in the drained Rotel, cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix until well combined and heated through.
  4. Spread the beef mixture evenly in the prepared baking dish.
  5. Sprinkle 1 cup of the shredded cheddar cheese over the beef mixture.
  6. Arrange tater tots in a single layer on top of the cheese.
  7. Bake for 30-35 minutes, or until the tater tots are golden brown and crispy.
  8. Sprinkle the remaining 1/2 cup of cheese on top and bake for an additional 5 minutes, or until melted.
  9. Let cool for 5 minutes before serving.

Notes

  • You can substitute cream of chicken soup for cream of mushroom if preferred.
  • Add a layer of chopped onions or bell peppers for extra flavor.
  • This dish can be assembled ahead of time and baked later.
