Ingredients
-
1 lb ground beef (or Italian sausage)
-
1 small onion, diced
-
2 cloves garlic, minced
-
1 (24 oz) jar marinara or pasta sauce
-
1 (14.5 oz) can diced tomatoes, undrained
-
1 teaspoon Italian seasoning
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper
-
8 oz lasagna noodles, broken into pieces
-
2 cups water or low-sodium beef broth
-
1 cup ricotta cheese
-
2 cups shredded mozzarella cheese
-
1/4 cup grated Parmesan cheese
-
Optional garnish: fresh basil or parsley
Instructions
-
In a large, deep skillet or sauté pan, cook the ground beef and diced onion over medium heat until browned. Drain excess fat if needed.
-
Add garlic and cook for 1 minute until fragrant.
-
Stir in marinara sauce, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
-
Add broken lasagna noodles and water (or broth). Stir to combine and press noodles down into the sauce.
-
Cover and simmer over medium-low heat for 15–18 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
-
Dollop ricotta cheese over the top and gently swirl into the skillet (don’t fully mix it in).
-
Sprinkle mozzarella and Parmesan cheese evenly over the top. Cover and cook another 3–5 minutes, or until cheese is melted and bubbly.
-
Garnish with fresh herbs and serve hot.
Notes
-
Swap in ground turkey or a plant-based alternative for a lighter version.
-
You can use no-boil lasagna noodles – just keep an eye on the liquid level.
-
Add a handful of spinach for a veggie boost!
