- For the Chicken & Potatoes:
- 4 boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 4 medium Yukon Gold potatoes, diced into 1-inch cubes
- 3 tbsp olive oil, divided
- Salt and pepper, to taste
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- For the Garlic Parmesan Sauce:
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley, for garnish (optional)
Instructions
- Prepare the Potatoes:
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add diced potatoes and season with salt, pepper, paprika, and garlic powder.
- Cook for 10-12 minutes, stirring occasionally, until potatoes are golden and tender. Remove from the skillet and set aside.
- Cook the Chicken:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook for 6-8 minutes until browned and cooked through. Remove from the skillet and set aside with the potatoes.
- Make the Garlic Parmesan Sauce:
- In the same skillet, add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer, scraping any browned bits from the bottom of the pan.
- Stir in heavy cream and Parmesan cheese, whisking until the sauce is smooth and creamy.
- Combine & Serve:
- Return the potatoes and chicken to the skillet, tossing to coat them in the sauce.
- Sprinkle shredded mozzarella evenly over the top.
- Cover the skillet and cook for 2-3 minutes until the cheese is melted and bubbly.
- Garnish with fresh parsley, if desired, and serve hot.
