  • For the Chicken & Potatoes:
    • 4 boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
    • 4 medium Yukon Gold potatoes, diced into 1-inch cubes
    • 3 tbsp olive oil, divided
    • Salt and pepper, to taste
    • 1 tsp paprika
    • 1/2 tsp garlic powder
    • 1/2 tsp Italian seasoning
  • For the Garlic Parmesan Sauce:
    • 4 cloves garlic, minced
    • 1/2 cup chicken broth
    • 1/2 cup heavy cream
    • 1/2 cup grated Parmesan cheese
    • 1 cup shredded mozzarella cheese
    • 1/4 cup chopped fresh parsley, for garnish (optional)


Instructions

  1. Prepare the Potatoes:
    • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
    • Add diced potatoes and season with salt, pepper, paprika, and garlic powder.
    • Cook for 10-12 minutes, stirring occasionally, until potatoes are golden and tender. Remove from the skillet and set aside.
  2. Cook the Chicken:
    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook for 6-8 minutes until browned and cooked through. Remove from the skillet and set aside with the potatoes.
  3. Make the Garlic Parmesan Sauce:
    • In the same skillet, add minced garlic and cook for 1 minute until fragrant.
    • Pour in chicken broth and bring to a simmer, scraping any browned bits from the bottom of the pan.
    • Stir in heavy cream and Parmesan cheese, whisking until the sauce is smooth and creamy.
  4. Combine & Serve:
    • Return the potatoes and chicken to the skillet, tossing to coat them in the sauce.
    • Sprinkle shredded mozzarella evenly over the top.
    • Cover the skillet and cook for 2-3 minutes until the cheese is melted and bubbly.
    • Garnish with fresh parsley, if desired, and serve hot.
