Scale
- 6 large eggs
- 2 tablespoons milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 4 breakfast sausage links or 1/2 pound ground breakfast sausage
- 4 large flour tortillas (8-inch size)
- 1 cup shredded cheddar cheese (or your favorite cheese)
- Optional: Salsa, hot sauce, or chopped green onions for serving
Instructions
Cook the Sausage
- If using sausage links, cook them in a skillet over medium heat until browned and fully cooked, about 8–10 minutes. If using ground sausage, cook and crumble in the skillet until browned. Remove from the pan and set aside.
Scramble the Eggs
- In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- In the same skillet, melt the butter over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are softly scrambled. Remove from heat.
Assemble the Wraps
- Warm the tortillas in the microwave or a dry skillet for a few seconds to make them pliable.
- Place a portion of the scrambled eggs in the center of each tortilla. Top with cooked sausage and a generous sprinkle of shredded cheese.
- Fold in the sides of the tortilla, then roll it up tightly into a wrap.
Heat and Serve
- If desired, lightly toast the wraps in a skillet or grill pan over medium heat for 1–2 minutes per side to crisp the tortilla and melt the cheese.
- Serve immediately with salsa, hot sauce, or chopped green onions on the side.
Notes
- To make these wraps ahead of time, wrap them tightly in foil and refrigerate for up to 3 days. Reheat in a microwave or oven before serving.
- For a freezer-friendly version, wrap each assembled wrap in plastic wrap, then foil, and freeze for up to 2 months. Thaw overnight in the fridge and reheat before eating.
- Add diced vegetables like bell peppers or spinach for an extra nutrient boost.
