- 1 1/2 cups shredded sharp cheddar cheese
- 1/4 cup crumbled cooked bacon (optional)
- 2 tablespoons chopped fresh parsley (for garnish)

Instructions
1. Prep the Potatoes:
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, toss halved baby potatoes with olive oil, ranch seasoning, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
2. Roast the Potatoes:
- Spread potatoes in a single layer on the baking sheet, cut side down for maximum crispiness.
- Roast for 25-30 minutes, flipping halfway through, until golden brown and fork-tender.
3. Add the Cheese & Bacon:
- Remove potatoes from the oven and sprinkle with shredded cheddar cheese and crumbled bacon (if using).
- Return to the oven and bake for 5 more minutes, until cheese is melted and bubbly.
4. Serve & Garnish:
- Sprinkle with fresh parsley and serve hot.
- Optional: Drizzle or serve with sour cream for extra creaminess.
