Description

  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (optional)
  • Chopped green onions or chives (for garnish)
  • Crumbled bacon (optional, for garnish)

Instructions

  1. In a large pot, combine potatoes, onion, garlic, and broth. Bring to a boil over medium-high heat.
  2. Reduce heat and simmer for 10–15 minutes, or until potatoes are fork-tender.
  3. In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to form a roux.
  4. Gradually whisk in milk and cook until the mixture thickens, about 3–5 minutes.
  5. Stir the thickened milk mixture into the pot with potatoes.
  6. Add shredded cheddar cheese, salt, pepper, and paprika. Stir until the cheese is fully melted and soup is creamy.
  7. Use an immersion blender to blend part of the soup for a thicker texture (optional).
  8. Serve hot, garnished with green onions or chives, and bacon if desired.
