This Cheesy Garlic Butter Mushroom Stuffed Chicken is a delicious, flavor-packed dinner!   • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • Salt and pepper, to taste
    • 1 tsp Italian seasoning
    • 1 cup shredded mozzarella or Swiss cheese
  • For the Mushroom Filling:
    • 1 tbsp olive oil
    • 2 tbsp unsalted butter
    • 8 oz (225g) mushrooms, sliced
    • 3 cloves garlic, minced
    • Salt and pepper, to taste
    • 1 tbsp fresh parsley, chopped
    • 1/4 cup Parmesan cheese, grated
  • For the Garlic Butter Sauce:
    • 2 tbsp unsalted butter
    • 2 cloves garlic, minced
    • 1/2 tsp Italian seasoning
    • Fresh parsley, chopped (for garnish)

Instructions

 

  1. Prepare the Mushroom Filling:
    In a skillet over medium heat, add olive oil and butter. Once melted, add the sliced mushrooms and cook until golden brown and soft, about 5 minutes. Add the minced garlic, season with salt and pepper, and cook for an additional 1-2 minutes. Stir in parsley and Parmesan cheese, then remove the skillet from heat and set aside.
  2. Stuff the Chicken:
    Preheat your oven to 375°F (190°C). Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to slice all the way through. Season the chicken with salt, pepper, and Italian seasoning. Stuff each chicken breast with the mushroom mixture and mozzarella cheese. Secure the opening with toothpicks if necessary.
  3. Sear the Chicken:
    In the same skillet, melt 2 tablespoons of butter over medium-high heat. Add the stuffed chicken breasts and sear each side for 3-4 minutes, until golden brown.
  4. Make the Garlic Butter Sauce:
    Add the minced garlic and Italian seasoning to the skillet, stirring until fragrant (about 1 minute). Spoon some of the garlic butter over the chicken.
  5. Bake the Chicken:
    Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted. Remove from the oven and garnish with fresh parsley.
  6. Serve:
    Serve hot with your favorite sides, like mashed potatoes or roasted vegetables, and enjoy!
