- 1 1/2 lbs boneless, skinless chicken breasts, finely chopped
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (for frying)
Instructions
- In a large bowl, combine chopped chicken, eggs, mayonnaise, flour, mozzarella, Parmesan, garlic, parsley, salt, and pepper. Mix until well combined.
- Cover and refrigerate the mixture for 15–30 minutes to help it firm up.
- Heat olive oil in a nonstick skillet over medium heat.
- Scoop about 1/4 cup of the chicken mixture into the skillet and flatten slightly into a patty.
- Cook fritters in batches for 4–5 minutes per side, or until golden brown and cooked through.
- Transfer to a paper towel-lined plate. Serve warm with your favorite dipping sauce.
Notes
- Finely chop the chicken for the best texture—avoid using ground chicken for this recipe.
- Try adding chopped spinach or sun-dried tomatoes for extra flavor.
- Fritters can be frozen and reheated for quick meals or snacks.
